Yes, We Are Really Making That

Today's homeschool co-op recipe.

Black Bean Brownies

1 (15.5oz) can black beans, drained and rinsed
3 eggs
3 T vegetable oil
1/4 c cocoa powder
1 pinch salt
1 t vanilla extract
3/4 c white sugar (do not decrease this amount for any reason!)
1 t instant coffee (optional, i don't, since i don't use the stuff and won't buy it for one lousy teaspoon)
1/2 c milk chocolate chips

Preheat oven to 350*F and lightly grease an 8x8 baking dish.

Combine black beans, eggs, oil, cocoa powder, salt, vanilla, sugar, and instant coffee (if using) in a blender. Blend until smooth and pour into baking dish.

Sprinkle the chocolate chips on top.

Bake until the top is dry and the edges just start to pull away from the sides of the pan, usually about 30 minutes.

These are good the first day, better the second, and if you can hold out the last of it until the 3rd day, they are best of all.

  1. Well, it certainly sounds intriguing. And it calls for skills not needed for rice krispy treats: the idea of preheating, using a blender, judging the texture of a mixture, how something changes during the baking process, and also the cooling process. You are doing right by the kids by presenting this recipe, even if it sounds off-the-wall. I hope you and they enjoy the lesson.
